My aldi pressure cooker find!

I have been wanting an Instapot since they came out and was afraid of them. Yes afraid of this contraption. How to use it, getting burned and just what exactly was it? But with all of that I still wanted one. I worked at a gym and everyone told me about their recipes and great quick meals. I planned to get one but my investment issues got in the way. I hate spending money on things and then not liking them or buying and not using them! So this kept it just in my head. Yes I know they are under $100 but they were costly enough to make me wait until I found a really good deal.

So here we are at Aldi grocery shopping trying to get in and out because you know 4 year olds. I see it on the bottom shelf. I had heard they had some because a month before my friend got one there. It was an 8 quart and the last one for $39.99. My inner thoughts took over and “how can you just leave it there?” “It will not be here if you come back” “You can tell him (husband) that it will save money for what it cost”. Ok so done it’s in the cart. I already had a ton of groceries so managed to put it right next to my 4 year old who carried on how he didn’t have anymore room. We got it home and the box was huge! I was so excited and still trying to work through how to sell it to my husband.

He walked in and I couldn’t hide it so just gave the me wtf look. But…. he quickly saw it was worth it. I had a work party coming up so first tried Spanish rice. The one thing I did read while obsessing on every blog post about the aldi brand is to cook everything a couple more minutes. So Spanish rice first dry was a bit dry. But the awesome thing was I was able to clean it quick and try again and perfect second try! Then I decided for the salsa contest we had planned for work I would try using it for my salsa verde.

AMAZING! It was so good. This recipe was part pressure cooker part blender. I have used it for roast 45 minutes, potatoes, hard boiled eggs, veggies and my next venture is tamales. The fact that I can put something in and leave it is one of my favorite things about it. Next would be how quickly everything cooks. I’m that mom who gets lost in my hectic days and forgets to get dinner out when we have an hour before tae kwon do. Or plans something and forgets to thaw the meat. This has saved many days or overly processed meals or fast food when we run out of time before a club or event.

So I totally think it is worth it. If you see the aldi brand buy it. There are many options I haven’t even tried yet I will keep you posted on but so far I have been happy with my pressure cooker. My next step in bravery hopefully is the yogurt function.

So for my salsa, yeah I won our salsa contest and it is a go to for salsa with dinner.

I know some people get nervous of the pressure but I completely forgot spaghetti! We make it in here super easy and kids love it. I have never had any issues with steam coming out because the lid locks and I can’t even open it until it is at a safe pressure. I feel more comfortable with this then boiling water for pasta.
